I adore PEACHES! They are flourishing right now in California, so we’ve been taking advantage of eating them while we can. We just got a bunch of sweet and juicy peaches from one of our favorite local farms, Good Humus.
The peaches on the counter we’re staring at me and I knew I had to make a batch of Peach Ice Cream. Unlike conventional ice creams that use thickeners to make the ice cream firmer, this ice cream is soft, creamy and fluffy. The flavor is mild in sweetness and the peach flavor really shines through. This ice cream is also raw, considering nothing is heated.
Peach Ice Cream (Dairy-Free Option)
Full of flavor, creamy and simply delicious! In my family, the ice cream doesn’t even make it to a bowl. We sit together and share it out of the ice cream maker container! And yes, we finish it.
Equipment: Blender, Ice Cream Maker
- 2 ripe peaches, peeled and quartered
- ¼ cup raw honey (I use local raw clover creamed honey)
- 1 teaspoon organic vanilla extract
- 1 ½ cups raw milk (See Resources)* or full-fat coconut milk
- ½ cup raw cream (optional)
1. Combine all ingredients in blender.
2. Blend on a lower setting until smooth and combined. No peach chunks should remain.
3. Pour mixture into ice cream maker.
4. Turn on and mix according to your ice cream maker’s instructions.
5. Ice cream will start to have a “soft serve” texture when it is done. This is my family’s favorite way to eat it. If you prefer it to be a little firmer or need to serve it later, place in the freezer to harden.
Yield: Makes about 2 ½ cups mixture, about 1 quart of ice cream.

Looking at that ice cream makes me miss being able to have dairy! The closest we'll get to having local peaches is what arrives from BC near the end of August! I buy several cases and we go through a bit of a peach eating frenzy in our house for several weeks. I'm so looking forward to them!
ReplyDeleteI can relate with the dairy piece. We've been down that road in my family with eliminations, and have been dairy free at times (as well as past years as vegans). With all of the other things that we can't have, I was really happy when we figured out that dairy (well raw dairy) is okay for my little one. I feel that it really helps with healing her teeth as well as other issues from toxic mold damage.

I haven't had any peach ice cream this year. This looks easy and delicious. I think I'll try it with coconut milk.

I would assume this would work in any ice cream maker, but I have never used an old fashion ice cream churn. I hope you get to try it.
