Apple Crisp w/ Soaked Oats Topping


Gravenstein Apples are in season right now and I have a huge box of them that I need to use so I decided to make an Apple Crisp.  My version uses soaked gluten free oats and requires advanced preparation.  Soaking grains is important because all whole grains have enzyme inhibitors that block nutrients from being absorbed and cause digestion issues.  Using the traditional practices of soaking helps your body absorb the nutrients that the whole grain has.


Apple Crisp w/ Soaked Oats Topping

Simply sweet and satisfying.  Enjoy this Apple Crisp for dessert or eat it cold the next day as a sweet snack.     

***Note: 24 hour Advanced Preparation Required***

Equipment: Large Mason Jar or Glass Bowl w/ Lid, 8 or 9 inch Square Baking Pan (2 inches deep), Colander, Large Mixing Bowl

Soaked Oats
·      2 cups gluten free rolled oats (I use Bob’s Red Mill GF Rolled Oats)
·      2 ½ cups warm filtered water, just enough to cover oats
·      2 tablespoons fresh organic lemon juice, unfiltered organic apple cider vinegar, whey, or kefir (my preference is lemon juice)

Filling
  • 8-9 organic apples, cored, peeled and chunked (about 8 cups)
  • 1 teaspoon ground cinnamon

Topping
  • 2 cups soaked gluten free oats
  • 1/2 cup pasture butter, cut into small pieces (See Resources)
  • ¼ cup + 2 tablespoons honey, preferably local or biodynamic
  • 1 teaspoon cinnamon

24 hours Before Making Apple Crisp:
1.     Place oats in a large Mason jar or large bowl w/ lid.  Cover with 2 ½ cups warm filtered water (warmer than room temperature) and lemon juice/apple cider vinegar/whey/kefir.  Cover with lid or clear wrap if you do not have a lid.  Leave out on counter for 24 hours. 


Making Apple Crisp:
1.     Preheat oven to 350 degrees F.  Set aside greased 8 or 9 inch square baking dish (you could also make this in a 2 inch deep round pie dish). 
2.    Strain the soaked oats through colander, set aside. 
3.    Prep apples.  Core, peel, cut into ½-1 inch chunks.  Place in large mixing bowl. 


4.    Add cinnamon to apples and stir to coat evenly. 


5.     Pour apples into baking dish. 


6.    In the same mixing bowl, combine soaked oats, pasture butter, honey and cinnamon.  Mix with hands to combine.  Make sure to break up the butter enough so it is incorporated into the mixture.  This will be a wet mixture, not crumbly like a typical non-soaked crisp topping. 
7.     Top apples with the soaked oat mixture, smooth out with hands, making sure it’s evenly distributed. 


8.    Bake for about 55-60 minutes or until topping is golden brown and apples are soft.
9.    Remove from the oven.
10.    Serve hot, warm or cold (I enjoy it cold as a snack the next day).  Enjoy as is or topped with ice cream.  



Yield: 6-8 servings.

Note: You can use any apples you’d like.  I used all Gravenstein apples because they are in season right now and that’s what I had on hand.  This would be delicious with a combination of sweet and tart apples too.

  11. Hi Linda :) Thanks for stopping by and for hosting Gluten-Free Wednesdays. I never used to use soaked oats either. Soaking the oats gives it a bit of a different texture compared to the common way of making crisp toppings. It's still delicious though :)
